Far in the south-west of the Philippines, on the island of Mindanao, a peninsula juts out into the Sulu sea – Zamboanga Del Sur. The single estate cacao sourced from this region was provided by our friend Pareng Earl – “The Pearl”, in Molave, who fermented the beans in mahogany wood boxes. This chocolate has notes of rum, fudge, and baked banana.
