Description
This 2025 special release continues our journey of Tree-to-Bar chocolate, once again crafted with single estate cacao grown in partnership with farmers in Barangay Alabiao, Tuao, in the northern Philippine province of Cagayan.
Each cacao pod and bean was meticulously inspected and fermented in custom boxes made from the wood of the Santol (Cotton Fruit) tree. The cacao was then brought back to Vancouver where it was roasted, winnowed, conched, and molded into chocolate bars, giving it complex notes of blueberry, plum, and black sesame.
The watercolor cover art features an interpretation of the Cagayan River—its flowing lines symbolizing both continuity and renewal, echoing the lifeblood of Northern Luzon and the heritage it sustains.
This bar won a Bronze (87.8) at the 2026 International Chocolate Awards (Canada).
