Description
This limited release chocolate bar is made with rare cacao beans sourced from remote villages in southern Apayao, located in the majestic Cordillera Mountain Range in the Northern Philippines.
The cacao trees grow at high altitude and are intercropped with unique, tropical fruits such as pomelo and lanzones. Among the many small scale farmers who harvested these wonderful beans is Uncle Ireneo and his daughter, Ambit, who transported the cacao down the mountain by carabao (water buffalo).
Cordillera cacao, bean to bar
The Philippines has grown cacao for centuries, yet it’s still rare to find in North American craft chocolate. This bar is made with beans from small farms in the Cordillera Mountain Range, the Rockies of the Philippines. We roast and stone grind them at our Granville Island workshop with just organic unrefined cane sugar and organic cacao butter, and at 70% the beans’ complex character shines: dark sugar, black boba pearl and medjool dates.
