In the foothills of Mount Talomo, in Davao in the southern Philippines, lies a land teeming with fruit, including durian, rambutan, highland bananas, and heirloom cacao trees. The Trinitario cacao beans from this region have a slightly reddish, chestnut brown colour, and delicate notes of honey, pear, and toffee.
