In the foothills of Mount Talomo, in Davao in the southern Philippines, lies a land teeming with fruit, including durian, rambutan, highland bananas, and heirloom cacao trees. The cacao beans used to make this chocolate are from the spring 2019 harvest, and have delicate notes of honey, pear, and toffee.
