Description
We first created this recipe for Laura and Stefan’s wedding, the theme of which was Forest and Sea, an homage to their roots – Laura having grown up on the coast, and Stefan hailing from deep in the woods of the West Kootenays. Blanketed in rich Ecuadorian dark chocolate, the piney flavour of whole rosemary combined with Pacific Ocean sea salt make for a most excellent marriage.

What’s in it
We start with single estate cacao from Costa Esmeraldas on Ecuador’s Emerald Coast, roasted and stone ground at our Granville Island workshop with organic unrefined cane sugar and organic cacao butter. Then come the forest and the sea: whole organic rosemary for a piney, herbal lift, and Pacific Ocean sea salt to bring out the depth of the chocolate.

What does rosemary chocolate taste like?
Rich, dark Ecuadorian chocolate first, then a fresh, piney rosemary note and a gentle hit of sea salt on the finish. Savoury and sweet at the same time.
Is it vegan and gluten-free?
Yes — cacao beans, organic unrefined cane sugar, organic cacao butter, organic rosemary and sea salt. No dairy, and made with gluten-free ingredients.
